E23 – When Dining No Longer Fits: A Framework for Repositioning Senior Living Dining Venues
Senior living communities continue to expand dining choice through pubs, bistros, marketplaces, coffee venues, and specialty dining concepts. Yet many communities find that years after opening, some venues are underutilized, operating differently than intended, or no longer aligned with resident expectations. This session presents a practical framework for evaluating and repositioning underperforming dining venues. Drawing on real-world experiences from senior living communities, presenters representing corporate operations, foodservice design, and senior living design strategy will explore why venues become underutilized and how changing resident preferences, operational realities, and design decisions contribute to long-term success or failure. Attendees will learn how to distinguish operational challenges from design-related issues, assess venue performance, and identify opportunities for improvement ranging from low-cost operational adjustments to larger repositioning efforts. Case examples will demonstrate how communities have adapted dining environments to better support resident engagement, operational efficiency, and evolving hospitality expectations. Participants will leave with a repeatable assessment framework they can apply to optimize dining venue utilization, improve resident satisfaction, and maximize the value of dining investments.
